A group of scientists at the University of California just completed a 10 year study comparing the flavonoid levels in conventionally and organic grown tomatoes and found twice the flavonoids in the organic variety. Flavonoids, also called Bioflavonoids, are elements of plants that have been shown to provide protection against heart disease, cancer and dementia. All things that I know I’d like to avoid. The study also showed that sustainably grown cover crops gradually increase the organic matter and fertility of their soil so farmers don’t need to use as much compost to keep nitrogen levels high.
